Ingredients

• 1 lb ground beef
• ½ cup breadcrumbs
• ¼ cup finely chopped onion
• ¼ cup finely chopped bell pepper
• 1 egg
• ¼ cup milk
• Salt and black pepper, to taste
• ½ cup Sweet Home Raspberry Pepper Jelly
• 2 tablespoons Worcestershire sauce
• Fresh parsley, for garnish

Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin.
2. In a large bowl, combine ground beef, breadcrumbs, onion, bell pepper, egg, milk, salt, and pepper. Mix just until combined.
3. Divide the mixture evenly among muffin cups, pressing gently to form mini meatloaves.
4. In a small saucepan, heat Raspberry Pepper Jelly and Worcestershire sauce over medium heat until smooth and combined.
5. Brush the glaze generously over the tops of the meatloaf muffins.
6. Bake for 20–25 minutes, or until cooked through and lightly caramelized on top.
7. Remove from oven and let cool slightly.
8. Garnish with fresh parsley and serve warm.
