Ingredients
- 1 package refrigerated pizza dough (or homemade dough)
- 4–6 strips cooked bacon, crumbled (see note)
- 4 large eggs
- 1–1½ cups shredded mozzarella cheese
- 1/3 cup Sweet Home Maple Bacon Jam
- 2 tablespoons milk or cream (optional for fluffier eggs)
- Salt & pepper to taste

Instructions
- Preheat & Prep: Preheat your oven to 425°F (220°C). Lay out the pizza dough on a parchment-lined baking sheet or pizza stone. Stretch or roll into a 12–14″ round or rectangle, depending on preference.
- Cook the Bacon: Cook bacon until crisp (use yesterday’s cooked bacon, already-cooked packs, or freshly cook and pat dry). Crumble and set aside, wiping excess grease from the pan or paper towels to reduce greasiness.
- Scramble the Eggs: In a bowl, whisk eggs with milk (if using), salt, and pepper. Scramble lightly in a skillet over medium heat until just set but still soft; remove from heat.
- Assemble: Spread the Maple Bacon Jam evenly over the stretched dough as a “base sauce.” Sprinkle shredded mozzarella, then scrambled eggs, and finally crumbled bacon over the pizza.
- Bake: Bake in the preheated oven about 12–15 minutes — until the crust is golden and the cheese is bubbly.
- Finish & Serve: Remove from oven and let cool slightly. Sprinkle with green onions or red pepper flakes if desired, slice, and serve warm!
