Ingredients for the Redfish

  • 4 redfish fillets (about 6 oz each), skin on or off
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Zest of 1 lemon
  • Lemon wedges, for serving

For the Grilled Squash

  • 2 medium yellow squash, sliced lengthwise into planks
  • 1 tbsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp black pepper

For the Sweet Home Muscadine Salsa

Instructions

  1. Prepare the Muscadine Salsa
    In a small bowl, stir together Sweet Home Muscadine Salsa, red onion, cilantro, and lime juice. Set aside to let flavors meld.
  2. Season the Fish
    Pat redfish fillets dry. Rub with olive oil, salt, pepper, smoked paprika, garlic powder, and lemon zest.
  3. Grill the Squash
    Toss squash planks with olive oil, salt, and pepper. Grill over medium heat for 2–3 minutes per side, until tender with light char marks. Remove and keep warm.
  4. Grill the Redfish
    Lightly oil the grill grates. Grill redfish over medium-high heat for 3–4 minutes per side, depending on thickness, until the fish flakes easily and has nice grill marks.
  5. Assemble & Serve
    Arrange grilled squash on plates, top with redfish fillets, and spoon Sweet Home Muscadine Salsa generously over the fish. Serve with lemon wedges.
