Ingredients

  • 1 cup cooked quinoa, cooled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup Sweet Home Pickled Okra, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and the Sweet Home Pickled Okra.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper to make the dressing.
