Ingredients
For the Pulled Pork
- 3–4 lb pork shoulder or pork butt
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 cup Sweet Home Carolina BBQ Sauce
- ½ cup chicken broth or water
For Serving
- Small flour or corn tortillas, warmed
- Shredded cabbage or coleslaw mix
- Thinly sliced red onion
- Fresh cilantro, chopped
- Optional: Sweet Home Hillbilly Pickles, chopped
Instructions
- Season the Pork: Pat the pork dry and season evenly with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Cook Low and Slow: Place pork in a slow cooker. Pour chicken broth around (not over) the pork. Cover and cook on LOW for 6–8 hours or until fork-tender.
- Oven method: Place pork in a covered roasting pan with broth and cook at 300°F for 3–4 hours, until tender.
- Shred and Sauce: Remove pork and shred with two forks. Discard excess fat. Return pork to the cooker or pan and stir in Carolina BBQ Sauce until evenly coated. Let it warm through for 10–15 minutes.
- Assemble the Tacos: Spoon pulled pork into warm tortillas. Top with cabbage, red onion, cilantro, and any optional toppings.
- Serve Warm: Serve immediately with extra Carolina BBQ Sauce on the side.
