Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup chopped Sweet Home Food's Cajun Candy

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place a 10-inch cast-iron skillet in the oven to preheat as well.
  3. In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, salt, and sugar.
  4. In a separate bowl, whisk together the buttermilk and eggs until well combined.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Carefully remove the preheated skillet from the oven and add the melted butter, swirling to coat the bottom and sides.
  7. Pour the cornbread batter into the hot skillet, spreading it evenly.
  8. Sprinkle the chopped Sweet Home Food's Cajun Candy over the top of the batter.
  9. Bake in the preheated oven for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
