Instant Pot Bloody Mary Pasta
Ingredients:
2 tbsp salted butter
2 ribs celery, diced
1-2 large bell peppers (any color), diced
1 medium red onion, diced
1 1/2 - 2 lbs andouille or any smoked sausage, sliced into 1/2-inch disks (or quartered if thick)
3 cups Sweet Home Food's Bloody Mary Mix
Juice of 1 lemon or lime
1 lb pasta
1 (approx 14-oz) bag frozen pearl onions
2 cups shredded Cheddar cheese blend (optional)

Instructions:
1. Add butter to the Instant Pot. Select Sauté on High. Once melted, add celery, bell peppers, and red onion. Sauté for 3 mins, then add sausage and sauté for another 3 mins.
2. Pour in Bloody Mary mix and lemon/lime juice. Stir well. Add pasta, but do not stir. Press down with a spatula to submerge mostly. Top with frozen pearl onions.
3. Secure lid, seal, and cancel sauté. Select Manual/Pressure Cook on High for 6 mins. Quick release when done.
4. Add cheese (optional) and stir until melted. Garnish as desired.
