Ingredients

  • 2 lbs fresh Alabama catfish fillets
  • 1 cup buttermilk
  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Vegetable or peanut oil, for frying

Instructions

  1. Prep the Fish
    Rinse catfish fillets and pat dry. Cut into serving-size pieces if needed. Soak in buttermilk for 10 minutes to tenderize and mellow the flavor.

  3. Dredge
