Ingredients
- 1.5–2 lb pork tenderloin

- 1 tsp smoked paprika (optional)

- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar or lemon juice
- Optional garnish: fresh thyme or rosemary sprigs
Instructions
1. Prepare the Pork
- Preheat oven to 400°F (200°C).
- Pat pork tenderloin dry.
- Rub with olive oil, salt, pepper, and smoked paprika (if using).
2. Sear the Pork
- Heat a skillet over medium-high heat.
- Sear pork tenderloin 2–3 minutes per side until golden brown.
3. Make the Glaze

4. Roast and Glaze
- Transfer seared pork to a baking dish or leave in an oven-safe skillet.

- Roast for 15–20 minutes, brushing with remaining glaze halfway through, until the internal temperature reaches 145°F (63°C).
5. Serve
- Let pork rest for 5 minutes before slicing.
- Spoon extra glaze over the slices and garnish with fresh thyme or rosemary if desired.
